The views from Waitangi Restaurant are almost as spectacular as the cuisine itself.  While you dine in a relaxed and friendly atmosphere, overlooking our lagoon style pools and a glimpse of romantic Russell across the bay. Your choice of fine á la carte dining featuring freshly caught seafood, oysters and other locally sourced products, or let us tempt you with our impressive buffet of fresh produce.

Breakfast - 6.30am - 10.00am
Dinner - 6.00pm- 9.30pm

Café Bar

The Café Bar offers indoor or alfresco dining. Opening into our tropical gardens, the Café Bar is an idyllic meeting place to enjoy a wide selection of New Zealand and International beverages along with a selection of lighter meals.  Enjoy a glass of local wine, a freshly made cocktail or just one of our delicious expresso coffees.  Our extensive Light Meals menu offers quick snacks and meals through the day. The great indoor/outdoor flow means that drinks and snacks can easily be taken outside in our Tropical Gardens or by the pool, allowing you to just kick back and concentrate on soaking up the sun.

Waimihi Lounge

The perfect place to relax away from the crowd, read a book and escape from the world. It is a quiet space to read a newspaper and enjoy a coffee or a cocktail.

Rangatira Room

 Enjoy a superb á la carte meals in a warm and intimate setting. This room can be closed off for private functions or opened up to create a large space which flows into the restaurant and bar area.

Jason Hall – Executive Chef

Jason Hall’s expansive career covers a long association with hotels. His first establishment was the Sheraton Hotel Auckland, where he worked for three years under the tutelage of Stephen Thompson. He then joined the trendy Kermadec Restaurant in Auckland. Jason’s love of travel and International cuisine then drew him abroad to the prestigious Soho House, in London. 

Upon returning to New Zealand Jason joined the Copthorne Bay of Islands. An avid fisherman, he is passionate about sourcing the very best ingredients which showcase all that the area has to offer.
