The views from Waitangi Restaurant are almost as spectacular as the cuisine itself.
While you dine in a relaxed and friendly atmosphere, enjoy views of the lagoon style
pools and a glimpse of romantic Russell across the bay. Your choice of fine á la carte dining
featuring freshly caught seafood, oysters and other locally sourced products, or let us tempt you
with our impressive buffet of fresh produce.
Our Café Bar offers indoor or alfresco dining. Opening into our tropical gardens, the Café
Bar is an idyllic meeting place to enjoy a wide selection of New Zealand and International
beverages along with a selection of lighter meals.
The Waimihi Lounge is the perfect place to relax away from the crowd, read a book and escape
from the world. It is a quiet space to read a newspaper and enjoy a coffee or a cocktail.
The Rangatira Room is a place to enjoy a superb á la carte meal in a warm and intimate
setting. This room can be closed off for private functions or opened up to create a large space
which flows into the restaurant and bar area.
Jason Hall – Copthorne Hotel and Resort Bay of Islands Executive Chef
Jason Hall’s expansive career covers a long association with hotels. His first establishment
was the Sheraton Hotel Auckland, where he worked for three years under the tutelage of Stephen
Thompson. He then joined the trendy Kermadec Restaurant in Auckland. Jason’s love of travel
and International cuisine then drew him abroad to the prestigious Soho House, in London.
Upon returning to New Zealand Jason joined the Copthorne Bay of Islands. An avid fisherman,
he is passionate about sourcing the very best ingredients which showcase all that the area has to
offer.
